Chicken Curry<\/strong><\/p>\n\n\n\n

2 tablespoons vegetable oil<\/p>\n\n\n\n

1 \u00bd tablespoons curry powder<\/p>\n\n\n\n

1\/2 cup diced sweet onion<\/p>\n\n\n\n

2 cloves minced garlic<\/p>\n\n\n\n

1 14 ounce can coconut or evaporated goat milk<\/p>\n\n\n\n

1 14.5 ounce can stewed, diced tomatoes<\/p>\n\n\n\n

Stevia to taste<\/p>\n\n\n\n

salt and pepper to taste<\/p>\n\n\n\n

2-3 boneless, skinless chicken breasts, diced<\/p>\n\n\n\n

Instructions<\/strong><\/p>\n\n\n\n

Heat oil in a large skillet over medium heat.<\/p>\n\n\n\n

Add curry, onions, and garlic and mix thoroughly. Cook for 3-4 minutes, stirring occasionally, letting the flavors meld.<\/p>\n\n\n\n

Add chicken, tossing lightly to coat. Season chicken with salt & pepper. Reduce heat to medium, and cook for 5 minutes, until chicken is mostly cooked through.<\/p>\n\n\n\n

Add goat milk, tomatoes, and stevia and stir to combine. Heat until lightly bubbling, then reduce heat and simmer for 10 minutes.<\/p>\n\n\n\n

Serve chicken over miracle noodles or any item of your choice. Store leftovers in an airtight container in the fridge.<\/p>\n\n\n\n

This recipe was modified for my diet but ingredients can easily be switched around. <\/p>\n\n\n\n
