Spicy Cauliflower Rice (Keto)

For the Chicken

  • 1 lb ground chicken
  • 1 Tbsp avocado Oil
  • 1 tsp Kosher Salt
  • 1 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Red Chili Flakes

For the Stir Fry

  • 1 Tbsp avocado oil
  • 12 oz of cauliflower rice
  • 2 large Eggs, beaten

Instructions

  1. Add the ground chicken, chili oil, and spices to a bowl and stir to fully coat the chicken.
  2. Heat a large skillet or wok over medium-high heat. Once hot, add the chicken to the skillet. Cook for 2 minutes before flipping the chicken and cooking for another 2-3 minutes until cooked through. Transfer the chicken to a clean bowl or plate and set aside.
  3. Heat the avacodo oil in the skillet before adding the cauliflower rice (from frozen). Cook for 5-6 minutes with minimal stirring. Whisk the eggs together while cooking.
  4. Create a well in the center of the stir fry and add the eggs. Scramble the eggs and mix into the stir fry before adding the chicken back to the skillet. Stir everything together and remove from the heat.
